Situated at an altitude between 350 and 400 metres above sea level, the soils in which our vineyards grow are rich in limestone, marl, alberese and argillite with a strong presence of marine fossils. This type of soil favours the cultivation of different grape varieties, giving them the unique characteristics of the Chianti region. Sangiovese, Canaiolo, Colorino and Ciliegiolo stand out among the red varieties, along with international grapes such as Merlot and Cabernet-Sauvignon, while the white grapes we grow are Vermentino, Malvasia and Trebbiano.
The olive groves are also distinguished by different varieties: Frantoio, Moraiolo, Leccino and Pendolino
The new cellar was built in 2000. It has a capacity of approximately 10,000 hectolitres and is dedicated partly to the vinification, transformation and ageing processes, and partly to storing previous vintages. The building was designed and built in harmonious balance with the beautiful landscape of the Chianti hills all around. Bordered by a row of cypress trees, it blends perfectly with the adjacent Cipresseta di Sant’Agnese, the only Italian example of a spontaneously renewing cypress grove.
Depending on the type of wine being made, we use stainless steel tanks and wooden barrels, sometimes in combination, to fully enhance the sensory characteristics. The steel tanks are used mainly for the fermentation and maturing of newly produced wines and for the ageing of younger wines. Wooden barrels in various sizes (large oak casks, barriques and tonneaux) and made with wood from different origins (French, American and Slavonian) are used for ageing the finest wines, to promote excellent evolution of their structure and aromas.
